Bakestone Care




 


The use of a bakestone or griddle is one of the oldest known methods
of cooking. From being basically a flat piece of metal it has developed
little over the years apart from having a handle of some sort added.

They can be used on any cooker or heat source including open fires and on barbecues.

Clean the cooking surface thoroughly to make sure the protective paint coating (non toxic) is removed.  Use a 'Brillo' type soap pad to do this.

The bakestone is then ready to be seasoned.
Heat the bakestone and when very hot, rub a mix of fat or vegetable oil and salt thoroughly onto the surface. Use a cotton cloth for this, not man made fibres. The fat and salt will burn onto the steel and after about 15 minutes there will be a smooth coating on the bakestone.

Allow the bakestone to cool naturally, then wash with warm water to remove the salt. Do not clean with any abrasive cleaning material as this will remove the smooth coating and the bakestone will have to be seasoned again.

When you are ready to cook, wipe a little fat or oil onto the surface and cook on a low to moderate heat.  After use, wash with warm soapy water, dry and store in a dry place. This is to stop rust marks appearing but if after a long storage they do, just clean and re-season.

To make the lifting and turning of your baking easier, our experience has shown that a good quality paint stripping knife (kept solely for the purpose) with a blade of 3-4 inches is ideal.
